Someone knows how to make Medieval Times vegetable soup or vegetable soup like tomato?

my son fell in love with the vegetable soup in medieval times and I want to do it for him. Does anyone know how to do it? was like tomato and I had diced tomatoes and other vegetables and either parsley or cilantro not I can remember.
