Seeds Courgette

The following recipe serves 4 and will last approximately 30 minutes to prepare and 45 minutes to cook.

  • 3 medium eggplants cut into quarter-inch [5 mm] slices and sprinkle with salt
  • 1 cup [8 ml or 230 ml] olive oil
  • 2 large potatoes, thinly sliced
  • salt and pepper to taste
  • 2 red peppers – chopped
  • 3 small zucchini – sliced
  • 3 cloves garlic – minced
  • 2 large tomatoes – skinned, seeded and chopped
  • pinch of sugar
  1. Leave the eggplant slices in a colander for 1 hour that have been sprayed with salt. Blot with paper towel after the hour.
  2. Heat the olive oil in a skillet over low heat and fry the potato slices until golden. Place potato slices in bottom of a heat-resistant casserole and season with salt and pepper.
  3. In the same oil lightly fry the eggplant slices and put them in the pot on top of the potato slices.
  4. Fry the peppers in the same oil, transfer to the casserole and place in the top of the eggplants.
  5. Fry the courgettes in the same oil again and transfer to the casserole and sprinkle with salt and pepper.
  6. Fry the garlic in the same oil [may need to add more oil] until brown and mix the chopped tomato. Cook over medium heat for about 20 minutes.
  7. Pass the sauce tomato through a sieve and spinkler with sugar. Pour over the vegetables in the casserole.
  8. Transfer to a 350 degree Fahrenheit [180 degree Fahrenheit] oven and bake for 10 minutes.
